Siberian sturgeon caviar offers a bright aroma and delicate texture, with medium-sized grains (1.5-2 mm) in rich dark gray to black hues. Its most notable feature is the exquisite taste of lightly salted caviar (35 grams per kg). The sturgeon (Acipenser baerii), weighing 20-25 kg, spawns at 7-8 years old in aquaculture and only once every 4 years. The most prized caviar comes from 18-20 year-old sturgeons, with eggs making up 1/5 to 1/6 of their body weight. Serve sturgeon caviar in special bowls on ice, using mother-of-pearl spoons to preserve its pure flavor.
